Super Salad (1 large serving)

2 heads organic butter lettuce, washed and cut

½ cup organic navy beans, cooked

¼ cup organic carrots, shredded

1 organic Persian cucumber, sliced

1 navel orange, peeled and diced

2 tablespoons fresh organic mint, finely chopped

1 tablespoon fresh-squeezed organic lime juice

2 tablespoons organic raw hemp seeds

2 tablespoons organic raw sprouted pumpkin seeds

2 tablespoons organic raw sprouted sunflower seeds

½ cup organic quinoa or brown rice, cooked

1 organic avocado, sliced

In advance, wash and cut the heads of butter lettuce; put in a salad spinner to remove excess water and then cool for 45 minutes in the refrigerator.

Combine chilled lettuce, navy beans, carrots, cucumber, orange, mint, lime juice, raw seeds (hemp, pumpkin, sunflower), quinoa, and Yachts of Love vinaigrette dressing to desired taste, and mix. Top it off with the sliced avocado.
