Farmer Market Scramble (3 servings)
6 organic pasture-raised farmers market or homegrown eggs
4 organic garlic cloves, finely chopped 1 tablespoon fresh organic dill, chopped
½ teaspoon Himalayan salt or Redmond’s Real Salt
¼ teaspoon ground organic black pepper
1 organic zucchini, grated
1 organic shallot, chopped
1 tablespoon organic expeller-pressed non-virgin coconut oil
1 organic avocado, sliced
1 medium organic heirloom tomato, diced
1-2 tablespoons Emerald City Kraut (www.fireflykitchens.com)
Combine eggs, garlic, dill, salt, and pepper in a bowl; blend with a fork or whisk and set aside.
In a large pan, sauté the zucchini and shallot in the coconut oil until the shallot is translucent (5-7 minutes). Next, add the egg mixture and cook to desired scramble. Garnish with avocado, tomato, and 1-2 tablespoons of sauerkraut.
