Journeyman’s Rice (4 servings)

1 cup Lundberg organic sprouted brown basmati rice

2 cups water (spring, filtered tap, or AquaViable), divided

½ cup sprouted organic mung beans

10-12 organic oyster mushrooms

1 organic zucchini, shredded

1 organic carrot, shredded

2 tablespoons organic ginger, finely chopped

2 organic scallions, chopped

¼ teaspoon ground organic black pepper

2 tablespoons Bragg Liquid Aminos or organic tamari

2 tablespoons organic sesame seeds

1-2 tablespoons Firefly kimchi (www.fireflykitchens.com)  

Chop the oyster mushrooms (heads and one inch of the stems only) and set aside.

Bring 2 cups of water to a boil in a medium pot and then add the rice, mung beans, mushrooms, zucchini, carrot, ginger, scallions, and pepper. Cover the pot and turn down the heat to a low simmer until the rice is done. Next, add Bragg Liquid Aminos or tamari and sesame seeds; mix well. Then plate the rice blend and garnish with 1-2 tablespoons of kimchi.
